Subsequent to World War II, torpedo fire control has made great strides forward. I doubt I'm capabled, individually, of taking advantage of that but I bet there are more than a few experienced gamers who could out-play the aim assist. The only way to aim the first torpedoes was to aim the launching ship. In theory those shots will act differently from the target's perspective than most aim-assisted shots. However if someone is shooting at them without the aim assist they will have more control over where the shot lands. Since the funnel/magnet affect exists on any shots aimed at someone they'll be used to seeing them at launch and beginning a dodge. Most players are probably going to be defined as 'skilled' in part on their ability to anticipate shots and angle to avoid them. And if you're aimed at an island, but a ship beyond the island is targeted, the game knows to fire at the more distant target, (hopefully) arcing over the island. So, if you aim high on a ship you have targeted, the game knows to fire at an angle that will hit that point, not some point in the sea beyond. So aiming higher than waterline puts the targeted point behind the ship. DD’s: Destroyers actually don’t have citadel areas defined for them as a survivability buff they received after 0.3.0, and thus most BB AP rounds will only do 1-1.3k dmg per shell.

(this is also what makes shooting another ship than the one you have target locked so weird) The spotter plane view aims purely on the horizontal water surface. About the only thing I see it doing is helping with intervening obstacles. This is what allows you to aim higher/lower on a ship even while giving lead.
